ZAC PANARETOS
Host of the On The Sauce podcast and Seafood editor at Fishing World. Zac has spent the last few years striving to find the best sustainable and culinary practices for fish care.

MARK LABROOY
Mark is a highly regarded and talented chef from his days establishing the esteemed 3 Blue Ducks. His company Discovered Foods, is all about harvesting wild produce. His happy place is extracting wild nutrients and preparing them using local produce that will leave you salivating.

NICK PEARCE
Nick’s popular “Recipearce” social media platform has inspired countless people to elevate their cooking game. Nick is an author, entrepreneur and cafe guru. His passion for the ocean makes seafood one of his areas of expertise.

BOSLEY MCGEE
A fish butcher who developed his skill set alongside Josh Niland. An absolute wizard with a blade, maximising the yield of every single fish taken. Inspirational dishes based on the cuts of a fish as opposed to just the fillets.

DAMIEN MARTIN
Owner and Head Chef at the hatted Milton Hotel, his love of the ocean through surfing, fishing and seafood has culminated in the development of an elite menu.

RYAN DOYLE
Doyles by the Sea is part of Australia’s longest-standing seafood lineage. Ryan works tirelessly in the markets prepping fish for Australia’s favourite restaurants.
